03 - Place white chocolate chips and coconut oil or vegetable shortening (if using) in a microwave-safe bowl. Heat in 30-second increments, stirring after each interval, until fully melted and smooth.
04 - Pour the melted white chocolate over the snack mix. Quickly fold the mixture with a spatula until all components are evenly coated.
05 - Transfer the coated mixture onto the prepared baking sheet and spread into a single, even layer.
06 - Allow the mixture to cool at room temperature for approximately 20 minutes, or until the coating is set.
07 - Break the set snack mix into bite-sized chunks and transfer to an airtight container. Store for up to one week.
