# What You’ll Need:

01 - 8 pork sausages (or chicken/vegetarian sausages as preferred)

# Steps:

01 - Heat 1 tablespoon oil in a large skillet over medium heat. Add the sausages and brown on all sides for about 8 minutes. Remove from pan and set aside.
02 - Add remaining oil to the pan. Sauté onion for 3 minutes until softened. Add garlic, carrot, and bell pepper. Cook for 4 minutes, stirring often.
03 - Stir in curry powder, cumin, coriander, and chili flakes. Fry for 1 minute until fragrant.
04 - Add diced apple and cook for 2 minutes to soften slightly.
05 - Pour in the chopped tomatoes, ketchup, mango chutney, and stock. Stir well to combine all ingredients.
06 - Return sausages to the pan. Bring to a simmer, cover, and cook gently for 20 minutes.
07 - Remove lid and simmer uncovered for another 5 minutes to thicken the sauce to desired consistency.
08 - Taste and adjust seasoning with salt and pepper if needed. Stir in yogurt or cream just before serving if desired.
