# Steps:

01 - Preheat oven to 400°F. Line baking sheet with parchment paper.
02 - Combine feta cheese, cream cheese, parsley, dill, lemon zest, and black pepper in medium bowl. Mix until fairly smooth with small feta chunks remaining.
03 - Place one sheet filo on clean surface, brush lightly with olive oil. Top with second sheet, brush again. Repeat to create stack of three sheets. Cut stack in half lengthwise to make two long strips.
04 - Place 2 tbsp cheese mixture near one end of each strip. Fold sides over filling, then roll tightly like spring roll. Repeat with remaining filo and filling to make 12 rolls total.
05 - Place rolls seam-side down on prepared baking sheet. Brush tops with olive oil.
06 - Bake for 16–18 minutes until golden and crisp.
07 - Meanwhile, combine honey and chili flakes in small saucepan over low heat. Warm gently for 2–3 minutes, then stir in lemon juice. Remove from heat.
08 - Drizzle warm chili honey over baked feta rolls. Serve immediately.

# Expert Tips:

01 -
  • The way the salty feta balances with sweet chili honey is absolutely addictive
  • These come together faster than you can order takeout but taste like you spent hours
  • Filo pastry creates this impossibly light crunch that everyone assumes requires serious skill
02 -
  • Filo dries out incredibly fast so keep the unused sheets covered with a damp cloth while you work
  • The filling needs small feta chunks for texture, so do not overmix it into complete smoothness
  • Roll them tighter than you think necessary because loose filling will leak and make everything soggy
  • The honey drizzle thickens as it cools, so warm it slightly right before serving if it has been sitting out
03 -
  • Work quickly and confidently with filo, hesitation leads to tearing and frustration
  • Let the cheese mixture sit at room temperature for 10 minutes before rolling so it spreads easily
  • Always drizzle the honey at the last possible moment so the pastry stays crisp
