# Steps:

01 - Preheat oven to 350°F. Grease a 9x13-inch baking dish with cooking spray or butter.
02 - In a skillet, heat olive oil over medium heat. Sauté diced potatoes for 5–7 minutes until starting to soften.
03 - Add onion and bell pepper to the skillet; cook for another 3 minutes. Stir in spinach and cook until wilted. Set aside.
04 - In the same skillet, cook bacon until crisp. Drain on paper towels and set aside.
05 - In a large bowl, whisk eggs, milk, salt, pepper, and smoked paprika until well combined.
06 - Layer sautéed vegetables, bacon, bread cubes (if using), and half the cheese in the prepared baking dish.
07 - Pour egg mixture evenly over the filling. Sprinkle remaining cheese on top.
